A popular San Antonio food truck is opening its first brick-and-mortar location at the Pearl's Bottling Department in October.
Chilaquil, known for its menu inspired by Mexican street food, will bring over its food truck favorites like its namesake chilaquiles, tacos, mollettes, quesadillas and other snacks.
Of course, the chilaquiles will come in different variations to chose from, including beans, eggs, chicken and steak. Customers will also have a choice of three different tortillas, tortas, crusty bolillos, several botana snacks and popular soft drinks from Mexico.
"I wanted to bring a traditional dish to San Antonio that was often hard to find at local restaurants, so that’s why we started Chilaquil,” said chef and owner Orlando Aguirre. “Moving into the Pearl Food Hall is so exciting, and we can’t wait to share our recipes with a new audience.”

Aguirre, who started the food truck with his wife Susana said the positive feedback from their customers inspired them to evolve their business and make the transition to the Pearl, which said in a news release that the new addition will help further its mission to incubate talent in the San Antonio community by providing space for local chefs to grow their menus.
“This extremely creative duo brings a great flavor to the Bottling Department,” said Elizabeth Fauerso, chief marketing officer of Pearl. “We are very excited to welcome Chilaquil and continue refreshing the offerings at Pearl, giving people a variety of cuisines and experiences with each new concept.”
An official date has not been set, but Chilaquil said it will cease its food truck operations in favor of their storefront. It will occupy the location that formally housed SayTown Tacos.
