AJ Sankofa and Kristina Gambarian thought they’d cracked the COVID-19 culinary code — a rare pandemic success as dozens of restaurants shuttered around them.

In July 2020, the couple opened ESO Artisanal Pasta in Morristown, where their from-scratch pastas and sauces — made for home cooking — were an immediate hit.
