Fine dining restaurant Marché Moderne puts its popular curbside pickup menu on pause - OCRegister

When the coronavirus hit, causing a ban on in-restaurant dining, Chef Florent Marneau had a plan and it was coq au vin.

Marché Moderne, the fine dining restaurant he founded and co-owns with his wife, pastry chef Amelia Marneau, typically does not offer takeout. Its refined cuisine, recognized in the California Michelin Guide with a plate rating as a distinguished dining room, and recently designated with Four Diamonds by AAA and the Auto Club, is meant to be enjoyed in a full service dining room.

But the two talented chefs quickly refocused the menu on a selection of pastries and dishes that travel and reheat to their standards, such as coq au vin, short ribs and others. Their curbside pickup business seemed to be thriving when suddenly, Tuesday, it was put on pause.

“We have made the difficult decision to cease Curbside Takeout for the time being. Please know that it was not for lack of support from the community. We have been so touched by the overwhelming response from all of our guests who have come from near and far the last seven days. It has kept our spirits up during this very emotional and challenging time. We will be back,” read a note posted on social media and signed, “Florent and Amelia Marneau and the entire team at Marché Moderne.”

“It kinda surprised me,” said Phil Crowley, owner of Modo Mio, the Italian restaurant also in the Crystal Cove Shopping Center on East Coast Highway with its ocean view, surrounded by multimillion-dollar homes. “They’ve got first class marketing people which we don’t have because we put it all back into the business.”

“The Irvine Company put up signs saying everybody was open but Javier’s is closed too,” Crowley said. Modo Mio remains open, selling wines and liquor at a 50 percent discount, as well as dry-aged steaks for the barbecue in cryovac packaging. His neighbor, Mastro’s Ocean, is offering steaks to cook at home, cocktails to-go and 50 percent off wines at $400 and less from its list.

Restaurants are doing all they can to keep sales up in these challenging times when bills from vendors and landlords continue to stack up while income flags. The grim reality is that takeout does not reap the same revenue as table service with elegant extras such as cocktails, wine, caviar service and desserts.

As for Marché Moderne, it’s not goodbye yet, simply à bientôt.

“With curbside takeout we were just trying to do what we could to protect our longtime staff’s wages for as long as we could. They are like family to us. The response from the community was so amazing — it was the first time we have ever done takeout and we were really touched by so many who came from near and far to support us,” Florent Marneau said. “We will never forget that. For now, we’re taking some time to reassess but we definitely will be back, this is what we do — there’s nothing else.”
