Hugo Miranda, owner of the popular Mexican restaurant Hugo’s Invitados in Irving, is slowly recovering after multiple months of battling COVID-19.
Miranda became sick last December and is still in the hospital. Recently, he was able to open his eyes to see his wife for the first time in many weeks, restaurant spokesman Matt Whiteley said.
For restaurant employees, working without Miranda has been difficult, he said.
“We’re like a family, and he’s our patriarch,” Whiteley said. “So much of this place comes from his heart.”
Hugo’s Invitados opened in 2018 with elevated Mexican cuisine, like pork belly chicharron, smoked salmon nachos and a Mexican cioppino. The restaurant translates to Hugo’s Guests, and hospitality is central to its mission, Whiteley said.
“When he speaks about hospitality, it’s like he’s preaching gospel,” Whiteley said. “No matter how much someone plans to spend, he wants them to feel celebrated, like they’re his invited guest.”
With the state’s COVID-19 restrictions ending Wednesday, restaurant staff will continue wearing masks for safety. Guests will be encouraged, but not required, to wear masks.
Whiteley said the restaurant is striving to carry out Miranda’s vision while he is recovering.
“When he returns, we want him to see that it’s just as good, if not better, than when he left it,” he said.
